Job Description

Baker Pastry Assistant:
Prepare, finish, pack and deliver exceptional Pitchoun bakery, pastry and food products in a clean, food-code-compliant working environment. Follow recipes and proper baking procedures. Have experience in the laminated dough, morning pastries, "pâte à choux, eclairs, tarts, cakes, entremets and cookies.

• Ability to coordinate multiple bakery tasks simultaneously, timely and in an efficient manner; must be able to multi-task.
• Demonstrate time management, organizational skills and ability to work independently. 
• Detail-oriented, desire and passion for exceptional bakery products.
• Display pleasant and polite demeanor while motivating co-workers to work as a team and to ensure that food and guest experience meet Pitchoun standards.
• Ability to communicate feedback to others constructively and politely.
• Accept special projects as required and appropriate for your own self-development.
• This individual must have a strong work ethic; must be able to work unsupervised AND in a fast-paced kitchen environment.

Performance tasks:

• Read carefully and follow baking recipes, follow thru prep lists, identify supplies, follow procedures safely and suggested bakery quantities. 
• Practice Pitchoun company training policy and safety procedure.
• Preparation or pans, proofing, scoring, baking and finish of baked goods and pastries, timely and efficiently while maintaining company.
• Ensure proper product identification, labeling and expiration dates of each product.
• Maintain and organize proper storage, identification and organization of products while maintaining optimal freshness and FIFO inventory principles.
• Ensure proper equipment and facility cleaning practices during each shift and maintain a food code-compliant facility at all times.

Physical Requirements:

• Constant standing and walking. Be able to work in a standing position for up to 8 hours.
• Occasional stooping, kneeling or crawling.
• Frequent pushing, pulling, lifting or carrying up to 50 lbs.
• Occasional ascending or descending ladders, stairs, ramps.
• Frequent, continual, intermittent flexing or rotation of the wrist(s) and spine.
• Constant receiving detailed information through oral communication.
• Constant talking, expressing or exchanging ideas by means of the spoken word.
• Occasional distinguishing, with a degree of accuracy, differences or similarities in intensity or quality of flavors and/or odors.
• Constant clarity of vision at near and/or far distances.
• Must be able to work in a hot environment.

Pitchoun is a family story! Frédéric and Fabienne Souliès are both French; he is from the South West of France and she is from Monaco, French Riviera. "Pitchoun" is a French affectionate term meaning "kiddo"— in a loving way. Frédéric comes from a family of French bakers and farmers. He inherited the love of the product and the passion of the work. The respect of natural resources and of seasonal foods is in his DNA. Fabienne’s family has always cooked, too. Her family had a flair for Mediterranean cuisine with an Italian twist, and was involved in the food industry. Frédéric thus naturally learned to bake and graduated from the renowned bakery school in Paris, France “Ecole de Boulangerie Patisserie de Paris”. After many years as the general manager of a French food manufacturing company, Frederic decided to live his dream and work out of passion-baking! His wife, Fabienne, and their three young "pitchouns" have happily settled down in Los Angeles with the intent of sharing their best family recipes!
